Different countries have different ways of making stew. As for the Kenyan home stew it is usually characterized by chunks of meat, potatoes, carrots and other vegetables boiled down with a few spices.
Meat 1/2kg
Chopped Onions
3 Tomatoes
Chopped Green pepper
Chopped Coriander
Smashed Ginger and Garlic (1/2 teaspoon)
Oil (4 teaspoons)
Salt to taste
Peeled Potatoes (preferred if stew is served with rice or chapatti)
Wash the meat, tomatoes and potatoes
Put them in a cooking pan and add salt
Heat to boil
After 7 minutes remove the tomatoes and potatoes to avoid smashing
Boil the meat for the next 10 minutes till tender
Peel off the tomatoes and smash them into a paste (this shortens the process of frying and enable tomatoes to form a thick  paste)

Move the meat into a bowl
Add oil and onions and green pepper to the cooking pan
Wait till onions become light in weight and almost brown then add tomatoes
Stir the paste till tomatoes form a uniform paste with the onions and green pepper
Add beef and potato to the paste and stir
Add coriander and cover for 1 minute
Serve for 3 people with Ugali, Rice or Chapati
