2 cups rice
1 grated coconut
Salt to taste
Clean and wash the rice
Squeeze the grated coconut into 1 cup concentrated milk and three cups diluted coconut milk
Pour the diluted coconut milk into a cooking pan and heat it with salt.
When bubbles start to appear take the soaked rice and add to the boiled coconut milk
Cook until nearly dry, gently add the concentrated coconut milk and cook till the rice is done
When the rice is ready, cover the pan with a wet paper and a lid
Put a weighty load on top of the lid
Keep the rice simmering on a very low heat for 15 to 20 minutes
Served with any stew of your choice.
