INGREDIENTS
½ kg finely minced meat
1 teaspoon crushed garlic
1 teaspoon crushed ginger
1 tablespoon grounded mixed spices
2 fresh chopped chilies
Juice of three big lemons
4 big chopped very thinly and into small pieces
1 table spoon tomato paste
1 teaspoon paprika
½ teaspoon black pepper
Salt to taste
½ Kg flour
2 tablespoon ghee
Oil for frying
METHOD
Put the minced meat into a cooking pan
Add the mixed spices (garlic, ginger, lemon juice, black pepper, paprika and salt)
Cook while stirring till dry
Add chilies with tomato paste
Mix till very tender and crunchy
Remove from heat and let it cool
Add the chopped onions and pour on a tray set aside
Mix flour and salt in a bowl
Add water and knead, into a soft dough
Roll the dough on a floured board to medium sized round shape then spread with 1 tablespoon ghee
Roll into a ball of dough and cover with a piece of damp cloth and set aside for 1 hour
Now roll the dough on a floured board forming a round shape ¼” thickness
Cook on a big shallow pan and do not add any oil
When half cooked on both sides, open the round pastry and in the middle spread the cooled minced meat mixture to the half pastry
Bring the other half pastry, on top of the meat mixture
Moisten the edges to seal
Add enough oil in a big shallow pan and heat
When hot drop in the Samosa and fry till brown on both sides
Drain and remove to a serving plate
Serve hot with a slice of sauce, chili and lemon!
