Is my favorite and the most widely ate food in Africa.
Ingredients
¾ kg Meat
1 table-spoon grounded mixed spices
3 cloves
3 big sliced tomatoes
1 tablespoon grounded garlic
1 tablespoon grounded ginger
2 big chopped onions
½ cup cooking oil
1 cup of peas (optional)
1 fresh green chopped chilly
3 cups washed rice
Salt to taste
Method
Cut the meat into considerable larger pieces than normal i.e 2 inches per piece and boil for 30 minutes
Heat the oil in a cooking pan and then fry the chopped onions until golden brown
Add the tomatoes , chilly and all the spices and fry the mixture on low heat
Add meat into the mixture and let it simmer for 3 minutes
Add potatoes (optional), peas (optional), rice and salt
Pour 6 cups of boiled water to the mixture and cooked until the rice is done
Mix well and cover the pan with wet paper and then cover it with a weighty lid (oven it with low heat)
Let it simmer for 25 to 30 minutes
Serve it in a plate while hot with hot sauce and salad. (In Coast its served in a metalic plate, sinia)
